Pineapple Sweet Potatoes

These don't taste like your usual sweet potato casserole. They are much lighter. The pineapple is the dominant flavor in this dish, and the sweet potato mellows the tartness of the pineapple. It's the perfect marriage of flavors, and it's delicious. Total cost of recipe: $3.52 or $0.30 per serving.
  • 1 (40 ounce) can cut sweet potatoes in light syrup ($1.98)
  • 1 (20 ounce) can crushed pineapple in pineapple juice ($0.98)
  • ½ to 1 teaspoon cinnamon ($0.06)
  • ¼ teaspoon nutmeg (optional) ($0.06)
  • 2 cups miniature marshmallows ($0.50)
  1. Drain canned sweet potatoes
  2. Mash yams.
  3. Add crushed pineapple to mashed yams along with cinnamon and nutmeg.
  4. Mix well to ensure pineapple and cinnamon are fully incorporated into the mashed sweet potatoes.
  5. Spread sweet potato and pineapple mixture into a prepared 2 quart casserole dish.
  6. Sprinkle miniature marshmallows on top.
  7. Bake in a 350 degree oven for 20 minutes until potatoes are heated through and marshmallows are golden.
  8. Serve.
