Chili Con Carne with Beans

This is a quick and easy chili recipe that is made almost entirely from canned food. The only fresh ingredients are diced onion, and minced garlic. Cook's Notes: If fresh onion and garlic aren't available, ⅓ cup of dried minced onion, and 1½ teaspoons of granulated garlic, can be substituted for the fresh. Total Cost of Recipe: $8.94 or $1.49 per serving.
Ingredients
  • 1 tablespoon extra virgin olive oil ($0.14)
  • 1 medium onion, chopped ($0.19)
  • 3-4 cloves garlic, minced ($0.08)
  • 1 (12 ounce) can roast beef in beef broth ($3.75)
  • 2 (8 ounce) cans tomato sauce ($0.50)
  • 2 (15 ounce) cans diced tomatoes ($1.38)
  • 1 (15 ounce) can kidney beans ($0.69)
  • 1 (15 ounce) can black beans ($0.69)
  • 1 (15 ounce) can pinto beans ($0.69)
  • 1 (4 ounce) can diced green chilies ($0.49)
  • 1 tablespoon chili powder ($0.12)
  • 1 tablespoon Cumin ($0.16)
  • 1 teaspoon Oregano ($0.04)
  • Pinch of Cayenne Pepper (or to taste) ($0.01)
  • Grated cheese and more chopped onion (Optional for Garnish)
Instructions
  1. Heat oil in a large pot or dutch oven.
  2. Add onion and garlic to oil and cook for 2 - 3 minutes until onion begins to become translucent.
  3. Add tomato sauce, diced tomatoes, beans, diced green chilies, chili powder, cumin, oregano, and cayenne pepper to pot and mix well.
  4. Bring to a boil then lower heat to simmer.
  5. Simmer for 15 minutes to allow flavors to fully combine.
  6. Ladle into bowls.
  7. Serve
  8. Top with grated cheese and more chopped onion, if desired.
