Spicy Brussels Sprouts and Tomatoes

Looking for a new way to serve brussels sprouts? Give this recipe a try. It's simple and delicious, and goes great with chicken, pork, or pretty much whatever you are having. Cook's Note: We used a can of mild tomatoes and green chilies in this recipe, but if you like things hotter, you can use the medium, or hot, versions instead.
  • 1 pound of brussels sprouts, cleaned and cut in half
  • ½ medium onion, chopped
  • 2 tablespoons olive oil
  • 1 (10 ounce) can mild tomatoes and green chilies.
  1. Preheat oven to 400 degrees.
  2. Place brussels sprouts and onion into a 9X13 inch pan.
  3. Drizzle with olive oil.
  4. Toss vegetables with olive oil.
  5. Pour tomatoes and green chilies over the brussels sprouts
  6. Bake for 20-30 minutes, until brussels sprouts are tender.
