Roasted Baby Carrots

Roasting carrots accentuates their natural sweetness. They're simple to prepare and are a great side dish for almost any meet entree.
  • 1 pound baby carrots
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt
  1. Preheat oven to 400 degrees.
  2. Arrange carrots in a 9X13 pan.
  3. Drizzle with olive oil.
  4. Sprinkle with salt.
  5. Toss to combine and then rearrange carrots in a single layer in baking pan.
  6. Place pan in oven at 400 degrees and bake for 20 - 30 minutes. You want the carrots to be tender and beginning to brown.
  7. Serve.
