Slow Cooker Corned Beef and Cabbage

This recipe requires a large slow cooker. Use at least a 6 quart slow cooker. An oval shaped cooker works best.
  • 1 large onion, thinly sliced
  • 1 (4 pound) corned beef brisket with seasoning packet
  • 6 russet potatoes, cut into 4 - 6 chunks
  • 7 carrots, cut into thirds
  • 1 head of cabbage, cut into wedges
  1. Place onion in the bottom of the slow cooker.
  2. Place corned beef brisket, fat side up into the slow cooker on top of the onion.
  3. Add any liquid from the corned beef packaging into the slow cooker, too..
  4. Sprinkle seasoning packet on top of corned beef.
  5. Add water to slow cooker to nearly cover corned beef.
  6. Arrange potatoes on top of meat.
  7. Arrange carrots on top of potatoes.
  8. Place lid on slow cooker.
  9. Cook on High for 6  - 8  hours or Low for 10 - 12  hours.
  10. One to two hours before serving, place cabbage wedges on top of the contents of the slow cooker. (The slow cooker will be very full.)
  11. Replace lid and allow to cook until cabbage is desired tenderness. (1-2 hours)
  12. Remove vegetables from slow cooker and season with salt, pepper, and butter.
  13. Slice corned beef and serve with the seasoned vegetables.
