Polynesian Corned Beef

The corned beef brisket is first boiled, then glazed before being placed in a hot oven. Accompanied by carrots, potatoes, and cabbage wedges which are also roasted, this is a hearty and delicious meal.
Ingredients
  • 1 (4 pound) corned beef brisket
  • 2 quarts water
  • 2 tablespoons pineapple juice
  • 2 tablespoons packed brown sugar
  • 2 tablespoons yellow Mustard
  • 6 potatoes cut into wedges or chunks
  • 7 carrots cut into chunks
  • 1 head of cabbage cut into wedges.
  • Salt, to taste
Instructions
  1. Place corned beef brisket into a large, deep pot and cover with water.
  2. Bring to a boil.
  3. Reduce heat, and simmer for 1 hour. This serves two purposes. It helps to tenderize the corned beef brisket and removes some of the salt.
  4. Remove corned beef brisket from water. (You can reserve this cooking liquid to make soup later)
  5. Drain brisket well, and pat dry with paper towels.
  6. Mix together the pineapple juice, brown sugar, and yellow mustard.
  7. Rub half of this onto the fat side of the corned beef.
  8. Place corned beef brisket in a pan, fat side up, that sprayed with non-stick cooking spray.
  9. Cover pan with foil, leaving space between the top of the brisket and the foil, and place in a 350 degree oven for 1 hour.
  10. While the corned beef is in the oven, you can prepare the potatoes, carrots, and cabbage.
  11. At the end of one hour, remove the foil covering the corned beef and turn the oven to 400 degrees.
  12. Toss carrots and potatoes with olive oil and salt and arrange some of them around the corned beef. in a single layer.
  13. Place the remaining vegetables in a separate 9X13 inch baking pan and place them into the oven.
  14. Drizzle cabbage wedges with olive oil and sprinkle with salt and place them in the pan with the other vegetables as well as around corned beef brisket in the oven.
  15. Brush meat with the remaining mustard and sugar mixture.
  16. Bake for one more hour at 400 degrees.
  17. Remove from oven and allow to rest for 5 minutes before serving.
  18. Slice corned beef and serve with vegetables.
  19. For added flavor, you can toss the vegetables with any leftover glaze that's in the bottom of the pan.
