Oven Roasted Barbecued Chicken with Rainbow Carrots and Potatoes

Chicken coated with barbecue sauce is arranged on top of seasoned vegetables before roasting. This is a simple and delicious one pan meal. Cook's note: If you can't find rainbow carrots, you can use regular carrots instead. The dish just won't be as colorful. Total Cost of Recipe: $5.07 or $0.85 per serving.
  • 12 drumsticks ($1.59)
  • 6 medium potatoes, peeled and sliced in ½ to ¾ inch slices ($0.67)
  • 1 pound rainbow carrots cut into 2 - 3 inch chunks ($1.99)
  • 2 tablespoons olive oil ($0.28)
  • 2 teaspoons salt ($0.08)
  • 1 teaspoon black pepper ($0.08)
  • ¾ cup barbecue sauce ($0.38)
  1. Preheat oven to 425 degrees
  2. Toss vegetables with olive oil, salt, and pepper until well coated.
  3. Coat drumsticks with barbecue sauce and arrange them on top of the vegetables.
  4. Place pan in 425 degree oven and bake for 45 minutes to 1 hour.
