Bacon Wrapped Asparagus--Only two ingredients and less than 30 minutes to a delicious addition to your summer barbecue.

Grilled Bacon Wrapped Asparagus Bundles

We love asparagus.  We roast it in the oven during cold months, and we throw it on the grill with the exact same seasoning combination in the summer.  These Grilled Bacon Wrapped Asparagus Bundles are so delicious that we just can’t get enough of them.   We love asparagus here at Patty Cake’s Pantry, and who doesn’t love bacon?   I just knew that this recipe was going to be a keeper, and  I was certain that I would make bacon wrapped asparagus bundles at some point during the summer.

The idea for this combination was not my own.  I kept coming across recipes for bacon wrapped asparagus that looked very tempting, but all of them recommended broiling or baking the bundles. Each recipe had its own unique way of seasoning the asparagus.  Rachel, at ASouthernFairyTale.com uses creole seasoning before wrapping the asparagus bundles with bacon.    Melissa, at MelissasSouthernStyleKitchen.com, rolls the wrapped bundles in a Parmesan-Romano cheese blend prior to baking.  Both of these options sounded great, but there was one problem.  It’s too hot to turn on the oven.  I had to try this on the grill.

I’ve grilled asparagus before, but it had only been tossed in olive oil and seasoned with coarse sea salt.    I was excited to experiment with this recipe, and I decided to keep it as simple as possible.

I purchased two bunches of thin asparagus and after trimming the ends, I arranged them in bundles of 8 to 10 spears.bacon wrapped asparagus These stacks of asparagus spears were then wrapped with a strip of bacon, carefully overlapping slightly as I wrapped from one end to the other.  Bacon Wrapped asparagus 6I placed these in my new porcelain coated grill pan, and carried them out to the grill.  Bacon Wrapped asparagusThey were placed on our preheated propane grill set to the lowest temperature.  Bacon wrapped asparagus 5These were allowed to cook for 5 minutes on each side.  What we didn’t anticipate was the grease from the bacon dripping down onto the flames and causing them to shoot up and burn the ends of the spears.bacon wrapped asparagus 9It looked pretty bad.  I though we had a grilling disaster instead of a winning side dish, but once I removed them from the grill and plated them, things didn’t look so bad.   A great deal of the charred tips had fallen away.Bacon wrapped asparagus cooked on the grill in about 10 minutes.The taste was phenomenal.  No one complained about the charred edges.  Actually, Food Critic complained, but there’s a reason we call him Food Critic.  The next time we do this, we think we will cook them over indirect heat to avoid the char.  Although I do have to admit that Baker’s Man and I thought that  there was something very tasty about the slightly blackened and crunchy parts of the asparagus.

Bacon wrapped asparagus, cooked on the grill, is the perfect combination of flavors. This recipe is a perfect addition to your summer barbecue.
Ingredients
  • 2 bunches of slender asparagus, trimmed
  • 6 strips of thin sliced bacon
Instructions
  1. Arrange trimmed asparagus spears into 6 equal bundles.
  2. Wrap each bundle with a strip of bacon, attempting to cover as much of the asparagus as possible.
  3. Arrange bacon wrapped bundles in a grill safe pan.
  4. Place pan on grill over low or indirect heat.
  5. Cook for 5 to 10 minutes per side on covered grill, or until bacon is thoroughly cooked.
