- 2 (14 ounce) cans of chicken broth ($1.38)
- 1½ cup diced celery (2 stalks) ($0.24)
- 1 medium sized yellow onion, diced ($0.26)
- 1 carrot (shredded, or finely diced) ($0.12)
- 1 (28 ounce) can mild green enchilada sauce ($1.58)
- 1 (15 ounce) can pumpkin puree ($1.29)
- 1 (12.5 ounce) can chicken breast ($2.58)
- 1 (15 ounce) can whole kernel corn, drained ($0.50)
- 1 (15 ounce) can black beans, drained and rinsed ($0.69)
- Place all ingredients into a sauce pan.
- Mix well.
- Bring to a boil.
- Reduce heat, and simmer for 15 to 20 minutes until all flavors are well combined.
- Serve.
- This soup can be served with tortillas, shredded cheese, and sour cream.

It’s a very hearty soup, but surprisingly low in calories. (Until you add a mountain of chips and cheese.)

This soup is very easy to make. I frequently make it with leftover chopped chicken instead of the canned. I just have to add a can of broth, or water. I love soup, and I could eat soup all year long, too. Of course, I usually don’t during the hottest days of the year.

I love anything that I can melt cheese on top of. The best part about this recipe is that because the soup is low calorie, there’s no need for guilt over the added chips and cheese.
