This is another one of my non-recipes. It’s just a cooking technique that effectively changes a very kid friendly dish, macaroni and cheese, into something a bit more ghoulish for Halloween. The entire process is very simple. All you need is a box of macaroni and cheese plus all of the ingredients needed to prepare it along with some green food coloring.
I’ve mentioned that it is often a challenge to get kids to eat dinner before heading out to trick or treat at night. This is one of my solutions to get my little monsters to eat something before heading out. The pasta is cooked in water that has been tinged with green food coloring. As the pasta cooks, it absorbs the food coloring, effectively tinting it a nice shade of green. I call this shade caterpillar green. If you want greener pasta, add more food coloring to the water. Once the pasta is cooked, simply drain it and finish making the macaroni and cheese according to package directions. Serve it to your adventurous eaters on Halloween and tell them that it’s caterpillars and cheese.
This looks good when you use regular boxed macaroni and cheese, but if you want to up your game and really impress your guests, use Cavatappi noodles. They make an even better caterpillar appearance.It’s amazing how a little food coloring can change an ordinary food item into something special for Halloween.
