Grilled Meatloaf Sandwiches are the perfect way to make use of leftover meatloaf. No matter which of my meatloaf recipes that I make. I always try to ration the meatloaf so that we will have enough leftover meatloaf so I can make Meatloaf sandwiches. We love meatloaf sandwiches, and Grilled Meatloaf Sandwiches with bread that’s been spread with Garlic Parmesan Butter is amazingly delicious.
For these sandwiches, we used the recipe for Stuffing Meatloaf, but it’s equally as good using the meatloaf recipe that I used for my Mummy Meatloaf. (FYI, You don’t have to turn that into a mummy. It works just as well as a regular meatloaf.)

- 6 tablespoons butter ($0.48)
- 1½ teaspoons granulated garlic ($0.12)
- 1½ teaspoons dried parsley ($0.12)
- 3 teaspoons grated Parmesan cheese ($0.08)
- 6 slices Swiss Cheese ($1.02)
- 6 slices of stuffing meatloaf ($4.62)
- 12 slices sour dough bread ($1.49)
- Allow butter to soften at room temperature.
- Add granulated garlic, dried parsley, and Parmesan cheese to butter and mix well until thoroughly incorporated.
- Spread butter on 1 side of all of the slices of bread.
- Break slices of Swiss cheese in half.
- Place 1 slice of bread, butter side down onto a skillet or griddle.
- Top the slice of bread with ½ slice of Swiss cheese.
- Place a slice of meatloaf on top of the cheese.
- Top meatloaf with another ½ slice of cheese.
- Place another slice of bread, butter side up on top of the half slice of cheese.
- Repeat steps 5 through 9 for the remaining 5 sandwiches.
- Cook over medium/low heat until cheese is melted, meat is heated through, and the sandwiches are nicely browned.
- Serve with the side of your choice.

The nutrition information for this recipe is calculated using 1/2 of the stuffing meatloaf recipe cut into six equal pieces to make 6 sandwiches. Nutrition information is for one sandwich.
