This is my favorite variation of a Gelatin Recipe that has been around for many years. This version which is made from pineapple tidbits and mandarin oranges has a decidedly light and refreshing flavor. What I love about it is that it’s easy to prepare, stores and travels well, and tastes good enough to serve to guests. My friends always comment that this is a delicious recipe, so it must be good, right? It’s a favorite that’s often requested at pot lucks.

Lemon Gelatin Fruit Salad

This is a light, fluffy, and refreshing dessert or accompaniment to a brunch. Though the prep time is listed as 2 hours and 10 minutes, 2 hours are for the time it must chill in the refrigerator in order to set up. This recipe stays soft and spoonable, though. It never truly firms up like a traditional gelatin dish. Chef's Note: If dieters or diabetics are coming to dinner, this can be made with sugar free gelatin, fat free cottage cheese, and light whipped topping. Marshmallows can also be omitted to further reduce the sugar content.
Ingredients
- 1 (20 ounce) can of pineapple tidbits packed in it's own juice, drained
- 1 (11 ounce) can mandarin oranges in light syrup, drained
- 1 (16 ounce) container of cottage cheese
- 2 (4 serving size) packages of lemon gelatin (or one 8 serving size)
- 2 cups miniature marshmallows
- 1 (8 ounce) container of frozen whipped topping
Instructions
- Place drained fruit and cottage cheese in a large bowl.
- Sprinkle lemon gelatin powder over top the top.
- Mix well until gelatin is thoroughly mixed into the fruit and cottage cheese mixture.
- Stir in marshmallows.
- Fold in frozen whipped topping.
- When mixture is thoroughly mixed, chill in refrigerator for two hours before serving.
- We think this goes great with Maria cookies.
