Bacon Wrapped Brussel Sprout Skewers

Bacon Wrapped Brussel Sprout Skewers are a simple and satisfying vegetable side dish that’s sure to please your family.  There’s something about the combination of crispy bacon and soft brussel sprouts that makes this dish amazing.  The ingredient list is incredibly short, and the final product looks impressive It’s good enough to serve to company, and because it’s wrapped in bacon, it may even entice your reluctant veggie eaters to give brussel sprouts a try.   My kids like any food that’s cooked on sticks, so this presentation may get your kids excited about eating brussel sprouts, too.   Of course, you will want to take the brussel sprouts off of the skewers before serving them to younger children.Bacon Wrapped Brussel Sprout Skewers

The most time consuming, hands on,  part of this recipe is cutting and wrapping the brussel sprouts before sticking them onto the skewer.  Of course, you can prep the brussel sprouts and half cook the bacon while the bamboo skewers are soaking.  Once the brussel sprouts are wrapped and skewered, all you need to do is stick them in the oven and wait for the timer to go off.   I suppose you could use that time to make the other foods that are being served, too.

This is a simple and satisfying vegetable dish that's sure to tempt everyone at your table. The combination of bacon and brussel sprouts is irresistible. Cook's Note: This recipe can be easily doubled, or tripled. All you need to do is increase the number of brussel sprouts and strips of bacon.
Ingredients
  • 16 brussels sprouts, cut in half lengthwise
  • 16 strips of bacon
  • 4 bamboo skewers that have been soaked in water for at least 15 minutes.
Instructions
  1. Cover bamboo skewers with water and allow to soak while you clean and prepare the brussel sprouts and bacon.
  2. Preheat oven to 400 degrees.
  3. Clean brussel sprouts and cut them in half from the stem end to the top.
  4. Cook bacon about half way. You want it to have rendered some of the fat, but to still be very soft and pliable.
  5. Place half cooked bacon aside and allow to cool and drain some of the grease.
  6. Cut each bacon strip in half.
  7. Wrap ½ strip of bacon around ½ brussel sprout.
  8. Secure bacon by placing wrapped brussel sprout onto a pre-soaked skewer.
  9. Continue wrapping and skewering until there are 8 bacon wrapped brussel sprout halves on the skewer.
  10. Repeat with the remaining skewers.
  11. Bake in 400 degree oven for 20 - 25 minutes or until bacon is crispy and brussel sprouts are tender.
