Bacon Wrapped Green Beans

This is a simple and delicious way to prepare green beans.  Wrapping bundles of green beans in bacon elevates this humble vegetable to a new level.  It can even be made from leftover garlic green beans which means you can have it ready in minutes.  All you need to make this delicious dish is some young and tender whole green beans and some prosciutto.  Wrap the prosciutto around bundles of partially cooked green beans, saute them in a combination of butter and olive oil until everything is heated through, and you have a simple a delicious accompaniment to your meal.

bacon wrapped green beansWe all know that I like to wrap my food in bacon, so this recipe is a natural progression of my bacon addiction.   For the record, I would like it known that I also like to wrap my food in ham, prosciutto, and on occasion, I have even been known to wrap my food in pounded chicken breasts.

bacon wrapped green beansThis recipe begins with fresh green beans.  These are blanched in boiling salted water for 2 – 3 minutes until they are crisp tender.  Then they are wrapped in bacon and either cooked on the grill or fried in a skillet until the bacon is fully cooked.     Once the bacon is cooked, the bundles are ready to be served.    These bundles can also be wrapped with prosciutto and heated in a little butter in a skillet.   Either way, this is a delicious way to serve green beans.

I don’t have a photo of the finished product because we ate them before I remembered that I was a food blogger.  To be honest, I didn’t take the other photos for this post either.  Thankfully, Pixabay came to my rescue.

Wrapping bacon around blanched green beans elevates the lowly green bean to a higher status. It's delicious, too. Chef's note: If you want to use prosciutto instead of bacon, follow the instructions, but melt two tablespoons of butter in your skillet before frying the bundles of green beans.
  • 1 pound green beans, washed and strings removed if necessary
  • 6 strips of bacon
  1. Blanch green beans in boiling water for 2 - 4 minutes until crisp tender.
  2. Immerse the beans in cold water to stop the cooking process
  3. Dry the beans with a paper towel or allow to drain completely in a collander.
  4. Cut bacon strips in half.
  5. Divide beans into 12 equal piles.
  6. Wrap each pile with ½ strip of bacon.
  7. Place bundles into a hot skillet with seam side down and allow to cook for 3 - 5 minutes or until the bacon is cooked on that side.
  8. Turn the bundles, using tongs, ensuring that all sides are cooked.
  9. Place bundles on paper towels or a rack to allow the grease to drain away.
  10. Serve as a side dish with your favorite meal.

    1. Isn’t it interesting how gathering up a bunch of green beans and wrapping them with bacon or prosciutto can make them seem fancier than either ingredient can be on its own?
