You know that we love beans here at Patty Cake’s Pantry, and we are always looking for new ways to prepare them. This recipe is similar to beans and greens, but it uses leeks in place of greens, and Italian seasoning, and parsley, in place of the red pepper flakes. The result is a simple and delicious vegetable side dish that is a perfect accompaniment to any meat entrée or is delicious on its own.
I got the idea for this recipe from Feeding Big. In fact, I had originally intended to make the recipe for Quick Easy Pork Chops with Leeks, Corn, and Beans, but when I opened the freezer, I didn’t have any pork chops. I was going to make something else with my leeks, but I kept thinking about that recipe. I kept considering my options, and I finally came up with the recipe below. It was well liked by everyone in our family. We had it with Perfect Steak, but it would be a great accompaniment to whatever you’re serving for your summer barbecues.

- 1 tablespoon olive oil ($0.14)
- 1 tablespoon butter ($0.10)
- 3 cloves garlic ($0.06)
- 3 leeks ($2.00)
- 1 (15 ounce) great northern beans, drained, rinsed, and returned to the can before it's refilled with fresh water. (In other words, put the beans back into the can and fill up the space between them with fresh water.) ($.69)
- ½ teaspoon chicken flavored bouillon ($0.06)
- 1 teaspoon Italian seasoning ($0.04)
- 1 tablespoon dried parsley ($0.03)
- Salt and pepper to taste.
- Clean and slice white and light green portion of leeks.
- Chop garlic
- Heat olive oil and butter in skillet.
- Add garlic and leeks to pan and saute 4 - 5 minutes until the garlic and leeks are tender.
- Drain and rinse the can of beans, adding water back to the can and the beans.
- Pour the beans and the water into the pan with the leeks and garlic.
- Stir in bouillon, Italian seasoning, and dried parsley.
- Heat to a boil, and simmer for 10 - 15 minutes.
- Season with salt and pepper to taste

I never know what to do with leeks, but this looks like a great use! I bet this would be great with grilled chicken, too.
I have the same problem when I buy leeks. I almost always just make potato leek soup. I was excited to try something new, and you’re right, Megan, it tastes great with grilled chicken.
