Refried beans are delicious, but I like more texture in my burritos. Of course, cooking dry beans gives you the most control over the final product, but it’s possible to make delicious beans with texture by using just a couple of cans and mixing them together. I previously posted a recipe for easy refried beans that uses canned beans, some bacon grease, and a little cider vinegar. That bean recipe was easy and delicious, but sometimes, after a hard day at work, I lack even the ambition for that. This non-recipe is my solution for those days. You can always find canned refried beans in your local grocer. There is a great assortment of flavored refried beans available in my grocery store. There are beans flavored with green chili and lime or with zesty salsa. Those are two of my favorites. Canned refried beans are convenient, but for my tastes, they are too smooth. I enjoy whole beans in my burrito, but regular canned beans are too watery. Here’s my simple solution. Mix an undrained can of beans with a same sized can of refried beans. Voila! Perfect beans for my burritos. These beans can be used for a simple bean and cheese burrito or to make a more complicated combination burrito that ‘s topped with enchilada sauce, and cheese. How ever you choose to eat them, this recipe is a keeper.
