Garlic Green Beans

I love green beans.   I especially love small fresh whole green beans.  As a child, my mother always served green beans that were boiled with some sort of bacon grease or salt pork in the water.  As an adult, I steamed my green beans, and though I seasoned them when they were removed from the heat, they never tasted quite right.  It wasn’t until a few years ago that I finally figured out a way to make simple and delicious green beans.  This recipe can easily be modified, too.  One of my favorite things to do is add a little soy sauce and sesame oil, and this recipe turns into Asian style green beans that I can add to a bowl with rice and an Asian inspired meat dish.

The recipe works well with either fresh or frozen green beans and comes together quickly.  Garlic green beans go well as a side dish with Roasted Chicken or Salisbury Fake.

Green Beans sauteed with garlic are an easy and flavorful side dish to serve with a variety of entrees.
  • 1 pound of small green beans
  • 2-3 cloves of garlic, chopped
  • 2 -3 tablespoons olive oil or a combination of olive oil and butter
  • salt and pepper to taste.
  1. If you are using fresh green beans, you will need to trim the ends and remove any 'strings".
  2. Next blanch the green beans as described in step three.
  3. Bring a large pot of water to a boil then submerge the beans in the water for 2-3 minutes. Remove the beans from the hot water and immediately immerse in cold water to stop cooking process. If you are using frozen green beans, skip this step because they were already blanched prior to freezing.
  4. Heat oil or oi/butter combination in a skillet and add garlic.
  5. Saute garlic for 2 minutes until it becomes soft but not browned.
  6. Add green beans to the pan with the garlic and stir fry until beans are tender. This takes about 5 - 10 minutes depending on how tender you want the beans. We like our beans crisp tender.
  7. Add Salt and Pepper to taste.

Green Beans sauteed in garlic and oil are a delicious side to any meal.

  1. So simple. I have fresh green beans and will try this tonight, substituting bacon grease for butter, from this mornings bacon & eggs.
    My grandmother and mom did the same with bacon or salt pork. Adding fresh garlic, always on hand, will make them super tasty. Thanks again Patty, for your flavor inspirations.

    1. Bacon fat is delicious. I like to use onions or shallots with bacon grease and green beans. This recipe is very versatile in that way.
