Pearl’s Cream Style Corn

This is a very simple combination that creates a delicious cream style corn that doesn’t seem like it came from a can.  The best part is that it takes about 10 minutes from start to finish which means your vegetable side dish is ready without any of the usual muss and fuss.

This recipe was given to me by my octogenarian friend, Pearl.  One day, she and I were discussing what I could do with cans of cream style corn that I had purchased by mistake.  I complained that there was no texture and wondered what I could use it in to get rid of it.  She said that canned cream style corn isn’t like the creamed corn from her youth and said that she remembered there being more corn kernels in it.  She had a simple solution to make it more palatable.  She added some whole kernel corn to the cream style corn, and this solved the problem.  I tried her suggestion and it was a hit in my house.  In fact, this is one of Sue Chef and Bus Boy’s favorite ways to have corn.    They’ve even requested it for Thanksgiving dinner.  Pearl's Cream Style Corn

This recipe doesn't seem like much, but the combination makes canned cream style corn better. Cook's Note: I've listed the butter and nutmeg as optional. We almost always add butter when we make this, but the nutmeg depends on what we are pairing it with. Pearl says it always needs a little nutmeg. Total Cost of Recipe: $1.12 or $0.28 per serving.
Ingredients
  • 1 (14.75 ounce) can cream style corn ($0.50)
  • 1 (15.25 ounce) whole kernel corn, drained ($0.50)
  • pinch of nutmeg (optional) ($0.02)
  • 1 tablespoon butter (optional) ($0.10)
  • salt and pepper, to taste
Instructions
  1. Pour cream style corn into a 1½ to 2 quart sauce pan.
  2. Drain whole kernel corn and add to the pan with the cream style corn.
  3. Add optional seasonings as desired.
  4. Turn on heat and bring to a boil.
  5. Serve.
