Pineapple Sweet Potatoes are a simple and delicious side dish for poultry or pork.  This version, which starts with canned sweet potatoes is very simple to put together and have on the table in record time.  Sweet potatoes are a favorite in my family, ans Pineapple Sweet Potatoes are always a big hit.

We mashed a drained can of sweet potatoes, added spices and stirred in a can of crushed pineapple.   The whole thing was topped with marshmallows before going into a 350 degree oven for about 20 minutes.  I had never made yams before, and we had no clue what we were doing. Pineapple Sweet Potatoes Fortunately, Pineapple Sweet Potatoes turned out to be a very tasty side dish that was well received by all of the dinner guests.Pineapple Sweet Potatoes

These don't taste like your usual sweet potato casserole. They are much lighter. The pineapple is the dominant flavor in this dish, and the sweet potato mellows the tartness of the pineapple. It's the perfect marriage of flavors, and it's delicious. Total cost of recipe: $3.52 or $0.30 per serving.
  • 1 (40 ounce) can cut sweet potatoes in light syrup ($1.98)
  • 1 (20 ounce) can crushed pineapple in pineapple juice ($0.98)
  • ½ to 1 teaspoon cinnamon ($0.06)
  • ¼ teaspoon nutmeg (optional) ($0.06)
  • 2 cups miniature marshmallows ($0.50)
  1. Drain canned sweet potatoes
  2. Mash yams.
  3. Add crushed pineapple to mashed yams along with cinnamon and nutmeg.
  4. Mix well to ensure pineapple and cinnamon are fully incorporated into the mashed sweet potatoes.
  5. Spread sweet potato and pineapple mixture into a prepared 2 quart casserole dish.
  6. Sprinkle miniature marshmallows on top.
  7. Bake in a 350 degree oven for 20 minutes until potatoes are heated through and marshmallows are golden.
  8. Serve.
