Roasted Brussel Sprouts with Bacon

Roasted Brussel Sprouts with Bacon are fast becoming a favorite vegetable side dish in our house.  Brussel sprouts are  tossed with a little olive oil and chopped bacon before being roasted in the oven.   Made this way, brussel sprouts are a simple and delicious side dish for your weeknight dinner.  We know that you will love Roasted Brussel Sprouts with Bacon as much as we do, so give this recipe a try.

I realize that I just posted a recipe for bacon wrapped brussel sprout skewers, but we have been eating lots of brussel sprouts lately.  This recipe was actually created because I was too tired after a long day at work to stand around and individually wrap each brussel sprout with bacon.  Instead, I chopped up the bacon, and tossed it, along with some olive oil, into the pan with the brussel sprouts before baking them.    The brussel sprouts were very tasty.  In fact, we liked them better than the skewers.Roasted Brussel Sprouts with Bacon

Brussel Sprouts roasted with bacon are a simple and delicious side dish that make the perfect accompaniment to any meet entree.
Ingredients
  • 1 pound brussel sprouts, cut in half
  • 4 strips of partially cooked bacon
  • 2 tablespoons extra virgin olive oil
Instructions
  1. Preheat oven to 400 degrees
  2. Chop bacon into small pieces
  3. Place brussel sprouts, bacon, and olive oil into a 9X13 inch baking pan.
  4. Toss well.
  5. Bake at 400 degrees for 20 - 25 minutes or until brussel sprouts are tender.

  1. I’m trying to get hubby to enjoy Brussels sprouts like I do. This recipe sounds like just the thing. Of course, I will need some grated sharp cheddar on top to satisfy him.
