I realize that I just posted a recipe for bacon wrapped brussel sprout skewers, but we have been eating lots of brussel sprouts lately. This recipe was actually created because I was too tired after a long day at work to stand around and individually wrap each brussel sprout with bacon. Instead, I chopped up the bacon, and tossed it, along with some olive oil, into the pan with the brussel sprouts before baking them. The brussel sprouts were very tasty. In fact, we liked them better than the skewers.

- 1 pound brussel sprouts, cut in half
- 4 strips of partially cooked bacon
- 2 tablespoons extra virgin olive oil
- Preheat oven to 400 degrees
- Chop bacon into small pieces
- Place brussel sprouts, bacon, and olive oil into a 9X13 inch baking pan.
- Toss well.
- Bake at 400 degrees for 20 - 25 minutes or until brussel sprouts are tender.

I’m trying to get hubby to enjoy Brussels sprouts like I do. This recipe sounds like just the thing. Of course, I will need some grated sharp cheddar on top to satisfy him.
Everything tastes better with cheese on it, but I prefer a light sprinkle of Parmesan on my Brussel sprouts.
