Slow Cooker Red Cabbage and Apples

Slow Cooker Red Cabbage and Apples is a twist on a traditional German side dish.   At least, hat’s what a German octogenarian told me.  This recipe is our attempt to recreate the dish for her.   We modified the recipe for Red Cabbage and Apples that she described by preparing it in a slow cooker to make it a bit less labor intensive. 

My friend was reminiscing about the foods that her mother prepared in her childhood and was longing to taste some of them again.   Unfortunately, she didn’t have control over the menu or the food that she was served.  I asked her to tell me what she remembered about making this dish and what her mother did during the preparation.   She told me what she remembered, and I began my experimentation.  Since her instructions included cooking the cabbage for 1 1/2 to 2 hours, I decided that this was a job for my slow cooker.Slow Cooker Red Cabbage and Apples

I sauteed the onions in butter to make them sweeter then added all of the ingredients to my slow cooker.    The slow cooker was covered, turned to low, and allowed to cook all day long.

The result was a delicious.  Our German friend proclaimed that it was “perfect,” and “delicious,”  and requested a second helping.  We decided that this goes well with Roasted Bratwurst and Potatoes.  Slow Cooker Red Cabbage and Apples

This is a simple side dish that cooks all day in the slow cooker while you're at work. It's modified from a stove top recipe given to me from an elderly German lady who was craving the taste of her homeland. She proclaimed that this version was perfect. Total Cost of Recipe: $3.66 or $0.61 per serving
Ingredients
  • 8 cups chopped or sliced red cabbage ($1.28)
  • 2 cups diced apples ($1.19)
  • 2 medium onions, sliced and sauteed in butter. ($0.38)
  • ¼ cup butter ($0.38)
  • ⅔ cup cider vinegar ($0.17)
  • ½ cup sugar ($0.12)
  • 1 tablespoon salt ($0.04)
  • ½ teaspoon black pepper ($0.01)
  • ½ teaspoon ground all spice ($0.04)
  • 1 large or 2 small bay leaves (($0.05)
  • ⅓ cup water
Instructions
  1. Melt butter in the bottom of a skillet.
  2. Add sliced onions to the melted butter and saute until the onions are beginning to become translucent.
  3. Pour butter and onions into the bottom of a slow cooker. Be certain to scrape all of the butter from the skillet into the slow cooker along with the onions.
  4. Add apples, and red cabbage to the slow cooker with the onions.
  5. Mix together the cider vinegar, sugar, salt, pepper, and all spice.
  6. Pour vinegar mixture over the cabbage, apples, and onions in the slow cooker.
  7. Rinse out the bowl that held the vinegar mixture with ⅓ cup of water then pour this water over the apples and cabbage in the slow cooker.
  8. Mix contents of slow cooker together.
  9. Place 1 large, or 2 small, bay leaves into the slow cooker.
  10. Cover and cook on high for 4 hours or on low for 8 - 9 hours or until cabbage is tender.
  11. Serve
