Hominy is something that I grew up eating. My mother’s favorite way to serve it was with bacon. This recipe, which gets flavor from diced green chilis, and creaminess from sour cream and shredded cheese is delicious. It makes a great side dish to go with anything that pairs well with the flavors of the southwest.
Since beginning my 30 days of cans challenge, I have been trying to present a variety of recipes for different types of dishes. Since I love hominy, I couldn’t let this month go by without having at least one recipe that used hominy. This recipe is a real winner in my opinion because it’s all made in one pan. That means there’s limited clean up. Everything is mixed together, the top is sprinkled with cheese, and it all goes into the oven. What could be simpler? Did I mention that it tastes really good?
I like to serve this with barbecued chicken, Green Chili Enchisagna or Creamy Chicken Enchiladas.

- 1 (29 ounce) can hominy ($1.69)
- 1 (4 ounce) can diced green chilies ($0.59)
- 1 cup sour cream ($0.74)
- 2 cups shredded Colby Jack cheese ($1.97)
- Preheat oven to 350 degrees
- Spray a 2 quart casserole with non stick spray
- Rinse and drain hominy and add to the prepared casserole.
- Add chopped green chiles, sour cream and 1½ cups shredded cheese to casserole dish.
- Mix until well combined.
- Smooth top and sprinkle with the remaining ½ cup shredded cheese.
- Bake at 350 degrees for 30- 45 minutes or until casserole is bubbly and cheese has melted.
