This recipe is for a sweet potato casserole that is so sweet and delicious that it’s almost like eating dessert. The secret is baking the sweet potatoes before making the casserole because baking makes sweet potatoes taste even sweeter than usual. The baked sweet potatoes are mashed and seasoned with butter, brown sugar, cinnamon, nutmeg, and vanilla before being spread in a baking dish. The top is sprinkled with a streusel topping and miniature marshmallows before going into the oven to be baked for 30 minutes. This sweet potato casserole is so good, that you will never want to eat sweet potatoes any other way. The process is simple. Sweet Potatoes are washed and baked until tender. Baking always seems to make them sweeter. These reddish colored sweet potatoes, sometimes referred to as Yams, have a more orange flesh than their tan colored counterparts. These make a more colorful dish, but if you prefer the others, you can use them.
Once the sweet potatoes are baked, carefully peeled them and roughly mash them together with all of the potato ingredients. This is spread into the bottom of a 9X9 or 8X11 inch casserole dish.
Sprinkle the top with miniature marshmallows, then sprinkle the entire dish with the streusel topping. Place the Sweet Potato Casserole into a 350 degree oven and bake for about 30 minutes or until the streusel topping and the marshmallows are beginning to turn a golden brown.

- FOR THE POTATOES:
- 5 - 6 medium sized sweet potatoes (You want about 4 pounds)
- ½ stick melted butter
- ¾ cup packed brown sugar (light or dark, but I prefer light.)
- ½ cup heavy cream
- 1 teaspoon kosher salt
- 1 teaspoon vanilla
- 1 teaspoon ground cinnamon
- ¼ teaspoon nutmeg
- FOR THE TOPPING:
- 2 cups miniature marshmallows
- ½ stick of melted butter
- ½ cup of flour
- ½ cup of quick oats
- ⅓ cup of packed brown sugar
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- Preheat oven to 350 degrees
- Arrange washed sweet potatoes on a foil lined baking pan and bake for 30 minutes to one hour or until the sweet potatoes are cooked and the flesh is soft. Cooking time will depend upon the size of the potatoes
- While the sweet potatoes cook, make the streusel topping by mixing together ½ cup of flour, ½ stick of melted butter, ⅓ cup packed brown sugar, ½ cup of quick oats, ½ teaspoon of cinnamon, and ¼ teaspoon of nutmeg. Mix this together until it forms soft crumb like clumps like a streusel type topping. Then, set it aside.
- When the sweet potatoes are fully cooked, remove them from the oven.
- Carefully peel the sweet potatoes (they will be hot).
- Cut sweet potatoes into chunks, and mash them with ½ stick of butter, ¾ cup brown sugar, ½ cup half and half, 1 teaspoon vanilla, 1 teaspoon ground cinnamon, and ¼ teaspoon nutmeg.
- Spread sweet potato puree mixture into a buttered 8X11 or 9X9 inch casserole, taking care to smooth the top.
- Pour two cups of miniature marshmallows over the top of the sweet potato mixture.
- Evenly sprinkle the streusel topping over the top of the sweet potato casserole and the marshmallows.
- Bake at 350 degrees for 30 minutes or until the streusel topping and the marshmallows are golden.
