Stuffing Meatloaf

Stuffing Meatloaf

Meatloaf is an American classic, and is something that many people list as a comfort food.  In our household, meatloaf is something that’s reserved for Fall and Winter meals when I don’t mind turning on the oven.  This recipe for stuffing meatloaf is different from our previous meatloaf recipe.  This version gets the majority of the seasoning from a package of corn bread stuffing mix that’s used as the breading in the meatloaf.      This recipe for stuffing meatloaf is easy to prepare, and goes great with cauliflower mashed potatoes and garlic green beans.

Barbecued Chicken and Potatoes Foil Pouch Dinner

This is the latest of our foil pouch combinations.  What can be simpler than throwing ingredients into a foil pouch  and tossing it on the grill?  This is a simple and delicious combination. Potatoes tossed with onions, and mini peppers are layered with chicken tossed with barbecue sauce before sealing them in a foil pouch and grilling for 15 to 20 minutes until done.    The finished dinner is loaded with the delicious flavors of summer and clean up is as easy as throwing away the foil when you’re through. It seems that our foil pouches are made from what we […]

Dr Pepper Ribs in the pressure cooker.

Pressure Cooker Ribs

These ribs are a variation of my Dr. Pepper Ribs that I have been meaning to publish for some time.  Sue Chef loves ribs.  She particularly enjoyed the Dr. Pepper ribs that she had at a local restaurant.  We don’t eat out often, but she really wanted to have those ribs again.  I found a recipe for Dr. Pepper ribs over at Men’s Health back during the spring, but the link is broken.  When I search their recipe archive, I can’t find it any longer, but that recipe was my inspiration for this one. The original recipe required brining the […]

Hot Wings from the Pressure Cooker

Hot Wings from the Pressure Cooker

As I previously mentioned, I am having a love affair with my electric pressure cooker.  I’m using it at least twice a week to make something for dinner.  It makes getting a meal onto the table simple and easy.  Today’s recipe is for hot wings.  I forgot to take my wings out of the freezer to thaw, so I made these from frozen.  They were still ready in under 30 minutes. All I did was melt some butter in the bottom of the pressure cooker, add the wings and the barbecue sauce and mix it all up so that the […]
