Vegan Easy Blueberry Apple Crisp (Gluten Free)

This Vegan Easy Blueberry Apple Crisp is a re-make of one of my oldest dessert recipes.  I love to make my Easy Apple Crisp because it’s simple to prepare, and it’s a family favorite.  This recipe is very easy to modify, too.   I’ve already created a  gluten free version of this apple crisp for a friend with gluten intolerance.  That version also happens to be vegan.   Having this recipe By using different fruits, or mixing different fruits together, you can create an entirely different dessert using this same recipe.  I’ve used this recipe to create a Blueberry Pear Crumble […]

Vegan Blueberry Apple Crisp

Blueberry Pear Crumble

One of the best things about summer is the prevalence of delicious fruit which can serve as the basis for many delicious desserts like this Blueberry Pear Crumble. The end of blueberry season coincides with the beginning of pear season.  What better way to celebrate the combination than with this delicious dessert?  This dessert was inspired by my Apple Crisp, and the presence of some ripe pears and blueberries that were sharing space in my  kitchen.  Why shouldn’t I combine the two into a crumble? You may be wondering about crumbles.  According to several sources, a crumble is a dessert […]

Cottage Cheese Stuffed Cantaloupe Salad with Blueberries

Cantaloupe and Cottage Cheese Salad

This has to be the easiest recipe I have ever shared.  A half of a small cantaloupe is filled with cottage cheese and topped with blueberries.  This is a simple and delicious summer lunch that’s figure friendly and very easy to put together.  All you need to do is cut the cantaloupe in half, scoop out the seeds, and fill the hollow with cottage cheese.  The sprinkling of blueberries is optional, but very delicious. This post was born one morning while I was desperately trying to figure out what I could take to lunch for myself and one of my […]

Coconut Water and Berry Popsicles

These Healthy and delicious popsicles are simple to eat and loaded with nutrition.  These were another creation that was made with input from Sue Chef.  Cool and refreshing, these frozen treats are perfect for a hot summer day, and there’s no guilt involved because they are made with fresh fruit, lemon juice, and coconut water.  If you want, you can add a little sugar, but if your berries are sweet enough, it’s completely unnecessary.  You begin by slicing your strawberries and mixing them, along with the blueberries with lemon juice and sugar or honey.  The addition of sugar or honey […]

fruit smoothie popsicle

Berry Swirl Popsicles

These popsicles are easy to make, delicious, and they’re good for you, too.   All you need is your favorite fresh fruit, some yogurt, and  you’re ready to go.  Whip all of the ingredients together in your blender, pour it into popsicle molds,  and freeze.  Actually, there’s an extra step in there to get the swirl, but it’s not important right now. In a few short hours, you will have popsicles that are healthy enough to eat for breakfast.  You’d be okay feeding your children fruit and yogurt for breakfast, wouldn’t you?  Imagine their faces if you were to hand them […]

holiday flag poke cake 1

Holiday Flag Poke Cake

I love making this cake for holidays, like memorial day and veterans day, and especially for the 4th of July.  It’s a simple process, and the kids can help with the decorating with very minimal help from Mom or Dad.  This method has been around since I was a kid, so I don’t know who should get credit for the idea.  The basic cake is a Poke Cake.First, bake a white, or yellow, cake, you can use a box mix or make it from scratch.  The choice is yours.  I listed a box mix in the instructions because it makes […]
