What do vegans eat for breakfast?

What Do Vegans Eat For Breakfast?

I’ve barely begun my vegan journey, and I’m already having a problem.  This wasn’t a problem yesterday when I gorged myself on fresh strawberries and banana slices for breakfast, but today was a different story.  My go to breakfast on most weekdays is a bagel slathered with cream cheese, and/or topped with smoked salmon.  Neither of these options is available to me as a vegan, so I asked myself  “What do vegans eat for breakfast?”  Obviously, fruits and vegetables are a possibility, but other options can be more complicated than they seem.  What follows is a list of our favorite, […]

beans on toast

Beans and Toast

When I was a child, my parents didn’t have a lot of money.  In spite of that, I rarely felt that we had to do without.  There was always food on the table, and my mom was a very good cook. This recipe had originally been planned as part of my 30 days of beans series, but I discovered that pies could be made from beans, so I abandoned beans on toast in favor of another pie recipe.  Still, as I was making myself a breakfast of beans on toast, I thought that I should share this simple recipe with […]

The burrito pie is cut for serving

Breakfast Burrito Pie

Before I begin with this recipe, let me tell you that I made it with the wrong sized tortillas.  I was certain that I had some 8-9″ flour tortillas, but I only had the really big ones that are made for burritos. This recipe looks much better, from a presentation stand point,  when it’s fresh from the oven and made with the smaller tortillas. It’s a little too crispy around the edges with these oversized tortillas folded over the top.  The leftovers were perfect, though.  Reheating in the microwave produced a moist tortilla on top instead of the crunchy one […]

Scrambled Eggs and Peas

Scrambled Eggs With Peas

I known this may sound like a strange combination to some of you, but its actually pretty tasty.  The first time I saw this, my aunt was serving it to us for breakfast one morning.  I liked to eat raw peas from the garden, so I didn’t hesitate to try this breakfast dish, and I liked it.  Recently, I woke up thinking about peas and eggs, so I whipped up some for breakfast.  I had leftover corn tortillas, so that was what I had with them instead of the toast that my aunt had served. This whole dish comes together […]

Breakfast From The Pantry

A well stocked pantry anticipates needs for more than just dinner.  Unfortunately, I realized that all of my recent recipes have been focused on lunch and dinner.  I realize that the food police won’t show up to arrest me if I serve a bowl of chili for breakfast.  In fact, I love to have leftover soup for breakfast with toast when the weather is cold outside.  It’s strange.  I know. There are many great pantry staples that make a great breakfast choice.  Cold cereals are a matter of personal choice, so I won’t discuss them here except to say that […]
