In spite of seriously overspending on my grocery budget this week, the rest of the week went well. We still didn’t make everything on our menu plan, but we ate enough of them that Sue Chef has agreed to leave the menu board alone. That’s definitely good news.

The first week of our plan has gone very well, except for the fact that we didn’t eat everything on our menu. We still had some leftover roast beef in our refrigerator, so I turned that into chimichangas. We also had leftovers from some of the meals, so we will be carrying over a few of the menu items for this week.

The first week of our Pantry Challenge has come to a close. We haven’t run out of anything, and we haven’t felt deprived. In fact, if I hadn’t told the family that we were doing a Pantry Challenge for the month of January, I don’t think anyone would have realized at this point.
