This is my favorite variation of a Gelatin Recipe that has been around for many years. This version which is made from pineapple tidbits and mandarin oranges has a decidedly light and refreshing flavor. What I love about it is that it’s easy to prepare, stores and travels well, and tastes good enough to serve to guests.
With Easter just around the corner, I have been thinking of the food traditions from my childhood. One of the traditions of the season was Creamed Eggs on Toast. Another was Glorified Rice. I don’t know how this dish got its name, so I have no idea why it was called glorified. I only know that it was delicious and a childhood favorite. This recipe is similar to one that’s been floating around the internet for some time. I intended to publish my version of the recipe this summer, but I was too busy with work to get the blog post finished. It’s a great summertime recipe because it doesn’t require any baking, and the resultant “cake” is delicious. Baker’s Man was amazed at how much it tasted like an eclair, and Sue Chef loved it.
