Vegan Steak Chili

Vegan Steak Chili

Vegan Steak Chili is another one of those improbable vegan recipes, yet here we are in the midst of our 30 day of vegan, and I’m writing this recipe.  I love chili, and today was a very cold day.  The weather can’t seem to make up its mind around here.  Chili is one of the hearty soup type recipes that my family can agree on, so we decided to make a vegan chili, and because we had the meat substitute, we made a vegan chili with “steak” pieces.

Chili con Carne with Beans

Chili Con Carne with Beans

This recipe for Chili con Carne with Beans is a simple and easy way to make a pot of chili that uses canned roast beef in place of the usual hamburger.  It’s simple, delicious, and loaded with flavor.  Because this recipe uses a large number of canned ingredients, it’s on the table in about 35 minutes.

Southwest Style Hominy Casserole

Southwest Style Hominy Casserole

Hominy is something that I grew up eating.  My mother’s favorite way to serve it was with bacon.  This recipe, which gets flavor from diced green chilis, and creaminess from sour cream and shredded cheese is delicious.  It makes a great side dish to go with anything that pairs well with the flavors of the southwest.

Southwestern crescent squares out of the oven

Southwestern Crescent Squares

I made this for dinner and had the hardest time coming up with a name for it.  I wanted to call it a pot pie, but in my opinion, a pot pie should have gravy.  There’s no gravy in this recipe.  I considered calling it a pasty, but pasties are supposed to be little half round things that are crimped shut.  It’s sort of a giant hot pocket, but pan pocket sounded too weird, so I opted for Crescent Squares because it has a crescent roll crust and is cut into squares for serving. This recipe is very easy to […]
