Today is the first day of my 30 days of vegan series.  It’s also Easter Sunday.  I realize that it’s also April Fool’s Day, but it’s no April Fool’s joke that Patty Cake’s Pantry will be vegan for the next 30 days.  I hadn’t really thought about Easter when I agreed to spend the next 30 days blogging about Vegan recipes.  Our traditional Easter fare includes a ham, mashed potatoes or augratin potatoes, macaroni and cheese, sweet potatoes, and green bean casserole.   None of these recipes are vegan.  That was a problem.   My family was not happy.  The decision to […]

Pressure Cooker “Fried” Chicken and Mashed Potatoes

The idea for this recipe came from two separate places.  First, the idea for the chicken came from Grandma Lynda’s YouTube Channel.  The idea for the mashed potatoes came from the cookbook which came with the electric pressure cooker that I received for Christmas.  I wanted to make “fried” chicken and mashed potatoes, so I decided to see if I could make both dishes in the pressure cooker at the same time.
