Breakfast Burrito Pie

Before I begin with this recipe, let me tell you that I made it with the wrong sized tortillas.  I was certain that I had some 8-9″ flour tortillas, but I only had the really big ones that are made for burritos. This recipe looks much better, from a presentation stand point,  when it’s fresh from the oven and made with the smaller tortillas.
