If they knew how easy it was to create these cookies, then everyone would be making them. Let’s just keep this secret between the two of us. These cookies were created for Sue Chef. She loves red velvet, but she’s a bit of a red velvet snob. She loves some and despises others. We thought that it would be great to make her a batch of red velvet cookies. Our original intention was to make the cookies and put two of them together with a filling of cream cheese frosting, but Bus Boy though it would be fun to use white chocolate chips.
It was a great idea, unfortunately, we didn’t have any white chocolate chips. We did, however, have almond bark. Using a knife, we chopped the almond bark into cookie sized chunks and used that instead. If you prefer a simpler solution, just use white chocolate chips. Either way, the cookies will be delicious.

- 1 (15.25 to 16.5 ounce) box of red velvet cake mix
- 2 eggs
- ⅓ cup safflower oil
- 1 cup white chocolate chunks or chips
- Preheat oven to 350 degrees.
- Pour cake mix into bowl.
- Add eggs and oil to cake mix.
- Mix until all ingredients are well incorporated.
- Stir in white chocolate chips or chunks.
- Roll dough into walnut sized balls.
- Place 2 inches apart on a cookie sheet
- Bake for 10 -12 minutes or until cookies are set and starting to crack on top.
- Cool for 5 minutes on cookie sheet then place on cooling rack.
