Coconut Oil Bark is a recipe that’s part of a tale from the “Transform in to Wellness” journey Do you want to hear the story? Ready or not, here it comes!
As a fledgling health coach, I am ever eager to help anybody possible find their way through our “SAD,” or Standard American Diet, into wellness. For example, I have been gently guiding a friend who complains of difficulty losing weight and chronic fatigue. Through our conversations, she has come to the realization that eliminating soda and processed foods will make a huge difference in her health. She so fully accepted my recommendations that I decided to promote an “elimination diet”. She initiated the diet whole-heartedly.
Unfortunately, after two days, she stated that the diet was too much to do at once. Living without the soda, the processed foods, and the gluten was tolerable; but excluding dairy, citrus, eggs, and SUGAR was just unbearable! As we discussed a new plan, I realized it is better to ease one into a wellness-type life style; otherwise it is just another DIET (which is a four letter word)! We finally agreed that soda, processed foods, and gluten stayed out; however, we needed a sweet treat substitute. I suggested fruit flavored herbal teas and Virgin Organic coconut oil mixed with raw honey and drizzled with dark chocolate. She loved the idea, so we will see how it goes later!
I thought you might also enjoy the recommendation and some instruction, too. This combination truly transforms the elimination diet. Perhaps a better name should be Elimination Transformation Coconut Bark.
So, here it is (from an artist-style cooking approach):
- 2 cups virgin organic coconut oil
- 2 tablespoons raw honey
- ½ cup of your favorite dark chocolate
- Melt coconut oil and honey in a sauce pan.
- Pour into a parchment paper lined dish.
- Cool in refrigerator.
- Melt chocolate, as much as you like, and drizzle it over the coconut bark.
- Return to refrigerator.
- Once hardened, take paper out of the dish and break, or cut, mixture into pieces.
- Keep refrigerated and take small bites when the sweet tooth is just too unbearable to resist.

To add a little pizazz, I love adding a safe, ingestable essential oil to this recipe. My favorites are peppermint, wild orange, or cinnamon! Oh, so good!

Interesting… coconut oil bark. This is completely outside my wheelhouse, but this looks super interesting. Also, I would definitely try this.
Keep it cold, preferably in the freezer, until you decide to eat it. The texture is better and the taste literally melts over your tastebuds. I hope you enjoy this healthy treat!

True! Good for the brain, the gut, and the immune system. Get a bigger bang for your buck by using raw, locally harvested honey! Local honey is great for supporting the body against environmental allergins and general immune function!

It is definitely good for all ages! Being able to grab a tasty treat from the freezer makes it seem really decadent! Cold like ice cream.. without the sugar, lactose, and carrageenan!
