Grilled Potatoes

If you’ve never tried grilled potatoes, you need to add them to your next summer barbecue.  These potatoes are perfectly seasoned, and the light carmelization that grilling adds to their flesh makes them irresistibly delicious.  These idea for these grilled potatoes actually started with a potato salad.   I saw a delicious recipe for grilled potato salad a few weeks ago.  The recipe looked and sounded delicious, but what intrigued me more that the potato salad was the idea of grilling potatoes.  We love potatoes around here.  Baked potatoes are a favorite with Sue Chef and Bus Boy, and   everyone in our family loves oven fries.   The problem with these recipes is that they require the use of an oven.  Even Pressure Cooker Baked Potatoes are finished in the oven, and it’s too hot to turn on the oven right now.  Triple digit heat isn’t really conducive to baking.

Grilled Potatoes 1.0I decided to try my hand at grilling potatoes.  We generally grill at least twice a week during the summer.  The other days, we use the microwave to reheat leftovers or eat salads and cold sandwiches.  I noticed the recipe for grilled potato salad recommended parboiling the potatoes first.  Since that would require turning on the stove, I declined to parboil my potatoes.  Instead, I stuck the potatoes in the microwave and cooked them for a few minutes, until they were mostly cooked.Grilled Potatoes 1.2Once the potatoes were cooked, they were cut in half and brushed with olive oil before being sprinkled with seasoned salt.Grilled Potatoes 1.2Once the potatoes were prepped, they were placed cut side down on the grill over low heat for 10 minutes.  grilled potatoes 1.3When they are finished, the potatoes will have grill marks on them.  This carmelization adds flavor and crunch.  The grilled potatoes were delicious.Grilled Potatoes 0.3These potatoes were so full of flavor.   They were the perfect accompaniment to our grilled, marinated flank steak.  grilled marinated flank steak and grilled potatoes We will definitely be making them again.

Ingredients
  • 6 russet potatoes
  • ⅓ cup of olive oil
  • Seasoned Salt to Taste
Instructions
  1. Cook potatoes in microwave for 5 to 7 minutes or until they are beginning to get tender.
  2. Cut potatoes in half lengthwise.
  3. Brush potatoes with approximately ½ tablespoon of olive oil.
  4. Sprinkle potatoes liberally with seasoned salt.
  5. Place potatoes, cut side down onto hot grill with indirect heat, if using charcoal, or over low heat, if using a gas grill.
  6. Allow to cook for about 10 minutes until potato finishes cooking.
