Vegan Garlic and Herb Butter

Vegan Garlic and Herb Butter was a necessity.  We love garlic, and we couldn’t enjoy pasta dishes or certain soups without a piece of garlic bread.  Technically, we could have eaten them, but we really like having garlic bread with our pasta dishes.  I mentioned in my previous post about vegan butter that once I had mastered vegan butter, it would be possible to make a compound garlic and herb butter that I could then use to make the garlic bread that all of us here at Patty Cake’s Pantry love.

I had linked to my garlic Parmesan butter recipe, but I realized that recipe contained cheese which is definitely not vegan.

After some experimentation, and a few failures, we finally came up with this recipe for Vegan Garlic and Herb Butter which makes delicious garlic bread.  It’s also good as a spread for sandwiches, and even on crackers for a snack.Vegan Garlic and Herb Butter

Vegan Garlic and Herb Butter

Homemade vegan butter is simple to make and by adding garlic and herbs, you can create a delicious spread for garlic bread, sandwiches, or for cooking. This recipe will add tons of flavor to your recipes. Cook's note: If you want your vegan butter to be more yellow add either a few drops or carrot juice or a few dashes of turmeric for color. Cost for this entire recipe is $3.85.
Ingredients
  • ¼ cup cashew milk ($0.19)
  • 1½ teaspoon cider vinegar ($0.06)
  • 2 tablespoons extra virgin olive oil ($0.28)
  • ¾ cup refined coconut oil ($1.07)
  • 4 cloves roasted garlic ($0.36)
  • 1 tablespoon dried Italian seasoning ($0.12)
  • 1 teaspoon dried oregano ($0.04)
  • 1 teaspoon dried basil ($0.04)
  • 1 teaspoon dried parsley ($0.03)
  • 1 teaspoon salt ($0.02)
  • ½ teaspoon black pepper ($0.02)
  • 1 teaspoon garlic powder ($0.04)
  • 2 tablespoons nutritional yeast ($1.58)
Instructions
  1. Place cashew milk and cider vinegar into a 2 cup measuring cup or a pint sized wide mouth mason jar.
  2. Allow milk to curdle slightly for about 5 minutes.
  3. Add other ingredients to the cashew milk in the order listed
  4. Using an immersion blender, carefully mix all of the ingredients together until they begin to resemble a very soft margarine consistency.
  5. Store in a 8 ounce mason wide mouth mason jar.
  6. Use to make garlic bread and to season other vegetable dishes.

Vegan Garlic Herb Butter is simple to prepare and tastes great as a sandwich spread, on garlic bread, or when added to your savory recipes.
