Ramen Stir Fry

Ramen is a very inexpensive pantry staple. It's also extremely versatile. This stir fry is loaded with vegetables, as well as some meat and peanuts, but you can add whatever you like, using this recipe as a guideline. I have made this without the chicken, using only nuts for a vegan version. You can use a different flavor of Ramen, too. It's a great way to get your kids to eat their vegetables, and it's delicious served with a side of either steamed or fried rice. This recipe is very frugal, too. The entire recipe costs only $8.32 or about $1.04 per serving

  • 2 (3 ounce) packages soy sauce flavored Ramen ($0.40)
  • 1 (10 ounce) package broccoli slaw (can use carrot slaw mix instead) ($1.99)
  • 1 (12 - 16 ounce) package tricolor coleslaw mix ($0.99)
  • 1 medium yellow onion quartered and thingly sliced ($0.20)
  • 2 cloves garlic minced ($0.10)
  • 2 tbsp oil (corn, canola, coconut, peanut--your choice)($0.16)
  • 1 cup leftover chopped chicken ($0.50)
  • 1 cup raw spanish peanuts (optional) ($0.38)


  • Bring 2 cups water to boil on stove.
  • Heat oil in large skillet.
  • Add onion and sautee for 2 minutes.
  • Add garlic to pan with onions and sautee for 1 more minute.
  • Add chicken, and ½ cup of peanuts to the pan with the onions and garlic and sautee for1-2 minutes.
  • Add broccoli (or carrot) slaw to the pan with the meat mixture and mix well to thoroughly combine.
  • Sprinkle seasoning packets from Ramen on top of the cabbage mixture.
  • Mix well and continue to cook, stirring frequently.
  • Break the brick of Ramen noodles in half and then break each half in half again.
  • Drop Ramen noodles into boiling water and allow to cook for one minute--just until they are separated.
  • Remove noodles from water and add to pot with cabbage mixture and toss together to evenly distribute them.
  • Continue stir the vegetable and noodle mixture until cooked to your desired level of doneness.
  • If you prefer softer vegetables, add water ½ cup at a time to the pan, and cover it to allow the vegetables to finish cooking by steaming.
  • Serve topped with additional peanuts. if desired.
