Bring 2 cups water to boil on stove.
Heat oil in large skillet.
Add onion and sautee for 2 minutes.
Add garlic to pan with onions and sautee for 1 more minute.
Add chicken, and ½ cup of peanuts to the pan with the onions and garlic and sautee for1-2 minutes.
Add broccoli (or carrot) slaw to the pan with the meat mixture and mix well to thoroughly combine.
Sprinkle seasoning packets from Ramen on top of the cabbage mixture.
Mix well and continue to cook, stirring frequently.
Break the brick of Ramen noodles in half and then break each half in half again.
Drop Ramen noodles into boiling water and allow to cook for one minute--just until they are separated.
Remove noodles from water and add to pot with cabbage mixture and toss together to evenly distribute them.
Continue stir the vegetable and noodle mixture until cooked to your desired level of doneness.
If you prefer softer vegetables, add water ½ cup at a time to the pan, and cover it to allow the vegetables to finish cooking by steaming.
Serve topped with additional peanuts. if desired.
