Grilled Chicken Caesar Salad

Salads topped with grilled meat are a summer favorite in our household. This simple grilled chicken Caesar salad uses simple, readily available grocery items to create a delicious, light, summer meal. The total cost for this meal is $9.61 or about $2.41 per serving.

  • 2 pounds boneless skinless chicken breasts (or thighs if you prefer) ($3.98)
  • 2 hearts of romaine chopped into bite sized pieces ($1.33)
  • 1 cup Caesar dressing ($1.14)
  • 1 cup shredded parmesan cheese ($1.49)
  • 1 cup prepared croutons ($1.67)
  • Freshly Ground Black Pepper to taste


  • Cut chicken breasts into thinner pieces if they're very thick then season liberally as desired. We like salt, pepper, and garlic powder.
  • Grill chicken, or pan fry until done. Set aside.
  • Place chopped romaine lettuced and the Caesar dressing into a bowl.
  • Toss lettuce with dressing until well coated.
  • Divide lettuce evenly among 4 serving plates.
  • Sprinkle the top of the dressed lettuce on each plate with ΒΌ cup parmesan cheese.
  • Cut chicken into strips, or bite sized pieces, and diistribute evenly on top of the cheese topped salad.
  • Sprinkle 1/4 cup of croutons over top of the salad.
  • Season with freshly ground pepper to taste.
  • Serve. (This is delicious served with hot rolls or a piece of garlic toast.)
