Cherry Cloud Pie

This Cherry Cloud Pie is a simple, no-bake, pie recipe that contains only three ingredients. It's simple to prepare, and makes a great, light, summer dessert. It's a frugal dessert, too. The total cost of the recipe is $3.24 or about $0.41 per serving.

  • 1 (4 serving size) box cherry flavored gelatin ($0.98)
  • 2/3 cup boiling water
  • 1 cup ice cubes and water to finish filling the measuring cup
  • 1 (8 ounce) container frozen whipped topping, thawed. ($0.98)
  • 1 (9 inch) graham cracker crust ($1.28)

  • Mix gelatin and boiling water in large mixing bowl until gelatin is dissolved.
  • Add ice cubes (and water) to the gelatin mixture and stir until the ice cubes are melted and the gelatin mixture has cooled to room temperature (or colder).
  • Fold in the cool whip until it's well incorporated and the mixture is a uniform color.
  • Chill in refrigerator for 15 minutes. It needs to be firm enough to mound up in the pie shell. If it's already firm enough, you can skip this step.
  • Scoop the gelatin and whipped topping mixture into the graham cracker pie crust, mounding it up in the center and smoothing the surface with a spoon or spatula.
  • Chill in the refrigerator for about 4 hours until it is firm enough to cut.

If you're not a fan of cherry flavor, you can make this pie using any other flavor of gelatin you can find.   We're anxious to try both orange and lemon in this recipe.
