This Cherry Cloud Pie is a simple, no-bake, pie recipe that contains only three ingredients. It's simple to prepare, and makes a great, light, summer dessert. It's a frugal dessert, too. The total cost of the recipe is $3.24 or about $0.41 per serving.
Mix gelatin and boiling water in large mixing bowl until gelatin is dissolved.
Add ice cubes (and water) to the gelatin mixture and stir until the ice cubes are melted and the gelatin mixture has cooled to room temperature (or colder).
Fold in the cool whip until it's well incorporated and the mixture is a uniform color.
Chill in refrigerator for 15 minutes. It needs to be firm enough to mound up in the pie shell. If it's already firm enough, you can skip this step.
Scoop the gelatin and whipped topping mixture into the graham cracker pie crust, mounding it up in the center and smoothing the surface with a spoon or spatula.
Chill in the refrigerator for about 4 hours until it is firm enough to cut.
Notes
If you're not a fan of cherry flavor, you can make this pie using any other flavor of gelatin you can find. We're anxious to try both orange and lemon in this recipe.
